Last month, a graduate student by the name of Josh Treuhaft set up the Salvage Supperclub in New York City—an establishment where diners pay US$50 to eat a six course meal made from food scraps salvaged from the dumpster. Chefs from the Natural Gourmet Institute created dishes using overripe fruits and vegetables that would normally be thrown away, calling into question what we perceive as waste. Most of them, including his four siblings and their spouses and children, still live here, and Alvarez expects much of the clan to attend her show.

"Fallen Fruit invites the public to bring homegrown or street-picked fruit and collaborate with us in making a collective fruit jams. Working without recipes, we ask people to sit with others they do not already know and negotiate what kind of jam to make: if I have lemons and you have figs, we’d make lemon fig jam (with lavender). Each jam is a social experiment.
